Crock Pot Egg and vegitable Casserole

Introduction

I doctored this recipe from another slow cooker recipe, so that it was more healthy. I doctored this recipe from another slow cooker recipe, so that it was more healthy.
Number of Servings: 6

Ingredients

    24 oz Knudsen non fat cottage cheese
    10 oz package frozen chopped broccoli, thawed and drained
    1/2 cup green bell pepper, chopped
    1/2 cup red bell pepper, chopped
    1/2 cup onion, chopped
    1 cup sharp cheddar cheese, shredded
    6 large eggs, beaten
    1/3 cup wheat flour
    1/2 tsp salt


Directions

Combine all ingredients in a greased slow cooker.
Cover and cook on high 1 hour. Stir. Reduce heat to low. Cover and cook 2.5 - 3 hours, or until temperature reaches 160 degrees and eggs are set.
Makes 6 servings.
