Mexican Pizza

Introduction

A hearty and healthier version of traditional fast food Mexican Pizzas. Feel free to substitute/add veggies - lots of options! Can also go low sodium easily and reduce fat by eliminating olive oil and using reduced fat or fat free cheddar cheese. A hearty and healthier version of traditional fast food Mexican Pizzas. Ingredients

    Red Bell Pepper, diced
    Yellow Bell Pepper, diced
    2 tsp. Olive Oil


    1 lb Ground Turkey 97/3
    McCormick Taco Seasoning (1/2 packet)
    1 can RoTel Mild Tomatoes & Green Chiles, drained


    Martha White Pizza Crust Mix (prepared)
    4 oz. Cheddar Cheese, shredded


Directions

Dice red and yellow bell peppers (or whatever sweet bell peppers you have on hand) and saute on med-low heat in a large skillet w/ 2 tsp. Olive Oil, stirring occasionally.

Spray a large skillet w/ non-stick spray and brown turkey on med-high heat. Add half package of taco seasoning and add drained RoTel tomato/green chiles. Cook until blended.

Prepare pizza dough according to package directions.

Top pizza crust with seasoned meat and tomato mixture, then add bell peppers, and top with cheese. Bake in oven according to package directions.

Servings: 8


I added onion and garlic powder to the meat for more flavor.
