Nikki's Healthy Cookies

Ingredients

    1 small ripe banana, mashed (about 1/2 cup)
    .5 tsp vanilla extract
    1 Tbsp olive oil
    1 tsp Lighter Bake fruit sauce
    2/3 cup Scottish oats
    3 Tbsp almond meal
    1 Tbsp flax seed meal
    3 Tbsp sweetened coconut
    .25 tsp baking powder
    .25 tsp cinnamon
    2 ounces chocolate chips

Directions

Position oven rack in the upper third of the oven. Preheat oven to 350. Line a baking sheet with parchment paper.

Combine bananas, vanilla, olive oil, and Lighter Bake in a large bowl.

Combine oats, almond meal, flax meal, coconut, cinnamon, and baking powder in a medium bowl.

Add dry ingredients to wet ingredients and stir until combined. Mixture may be wet. Forld in chocolate chips.

Place 12 balls of cookie dough on the parchment paper covered cookie sheet about 2 inches apart. Flatten very slightly.

Bake on the upper rack of the oven 12 to 14 minutes until edges are golden brown. Transfer to a wire rack to cool completely.

Makes 12 cookies.
