Versatile Vegetable Stir Fry

Introduction

Use these veggies to compliment any dish! Add to brown rice or your favorite pasta! Don't be afraid to experiment with herbs and spices. Add Dill to compliment a chicken dish. Ingredients

    1 C Diced Zucchini
    1 C Diced Yellow Winter Squash
    1 C Diced Mushroom (crimini, white or baby bella...or 1/3 C of each)
    1 C Diced Celery
    1 C Diced Yellow or Spanish Onion
    2 Tbsp Minced Garlic
    2 Tbsp Extra Virgin Olive Oil
    1 Tsp Salt
    1/2 Tsp Fresh Ground Black Pepper

Directions

Preheat deep skillet over medium heat.

Add oil to pan. Add garlic, celery and onion to pan and stir frequently until garlic is lightly browned and onions are translucent.

Add remainder of ingredients to pan and stir until all vegetables are tender (about 8 minutes). Add any additional herbs or spices when adding in remaining veggies.

Have fun with this dish! Makes 10 - 1/2 C servings.
