2 tbsp olive oil
Â½ teaspoon ground cumin
Â½ teaspoon turmeric
1 red onion, sliced
2 garlic cloves, crushed
1 red pepper
3 sticks of celery
255g/9oz vegetarian mince such as Quorn
450ml/16fl oz vegetable stock
400g/14oz can chopped tomatoes
4 tablespoon tomato puree
400g/14oz can red kidney beans, drained and rinsed
freshly ground black pepper
â€¢ Add in the onion and garlic and fry for 3-4 minutes.
â€¢ Add the pepper, celery and carrots and cook for 4-5 minutes.
â€¢ Stir in the vegetarian mince and fry for couple of minutes.
â€¢ Add the stock and the tomatoes. Cover and simmer for 20 minutes.
â€¢ Add the kidney beans and simmer for a further 15 minutes.
â€¢ Season to taste with salt and freshly ground black pepper.
â€¢ Serve with corn bread and/or steamed rice and a spoon of tomato salsa

This recipe was DIVINE!!! my partner loved it and he is not one for vegetarian or healthy!!
