1 cup unsweetened frozen blueberries
1 1/4 cups whole wheat flour
3 tsp baking powder
1/3 cup sugar
1/4 cup canola oil
3/4 cup skim milk
1 tsp sugar
In a bowl, combine egg, oil and milk. Add baking powder and 1/3 cup sugar, mix well. Add flour, mix just until moistened. Fold in frozen blueberries.
Spray a mini muffin pan with vegetable spray. Fill each muffin cup just to the top. You should be able to divide batter among 24 mini muffins. Sprinkle tops with 1 tsp sugar. Bake for 10-15 minutes until golden brown.
