Apricot Pork Chops

Introduction

Peach preserves or orange marmalade can be used instead of apricot preserves. Serve these tangy chops with a dressed baked potato and sugar snap peas. Ingredients

    Cooking spray4 (4-ounce) boneless loin pork chops 1/4 cup prechopped onion1/4 cup apricot preserves1 tablespoon low-sodium soy sauce2 teaspoons bottled minced garlic1/4 teaspoon salt1/4 cup sliced green onions

Directions

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pork to pan; cook 6 minutes on each side or until done. Remove from pan; keep warm.

Add prechopped onion to pan; sauté 4 minutes or until lightly browned. Stir in preserves, soy sauce, garlic, and salt; cook 3 minutes or until thickened. Add pork to pan, turning to coat. Sprinkle with green onions.

Yield: 4 servings (serving size: 1 pork chop and 1 tablespoon sauce)

    I substituted citrus conserve for the apricot marmalade, used country style ribs (that's what we had on hand) and baked them covered w/foil @375 degrees for about 1 hr. You have to adjust the nutritional info. Delicious - 7/14/08

    This was easy and great! I sprinkled hickory BBQ seasoning on the pork chops before browning to give it a smoky flavor and de-glazed the pan with 2 T white wine before adding the preserves. Definitely a keeper. - 10/24/08

    i made the chops its great i didnt have apricot though so i used strawberry preserve and it turned out awesome just use what you got save money and make good food - 7/17/08

    I have made a similar recipe. If your doctor says no pork, then try the pork tenderloin. Extremly low in fat. I have used the apricot/soy sauce/ garlic plus added ginger thing with chicken, beef, fish and pork tenderloin. My family loves it. - 7/15/08

    I make a version of this. I use 1/2 C sugar free apricot perserves or orange marmalade. Combine it with 1 T prepared horseradish and fresh rosemary. Bake that with chicken or pork and it is delicious!!! - 7/9/08

    Excellent! This is one to cook for guests! Even my junk food junkie hubby gave a thumbs up on this one! Side Note: I substituted sugar free preserves for regular preserves and omitted the 1/4 teaspoon salt. - 4/1/08
