A healthy way to use leftover turkey (or chicken) - colorful and crunchy!
1 cup turkey, white meat, cubed
1/2 cup celery, chopped
1/3 cup dried cranberries (Craisins)
1/3 cup apple, cored and chopped
1/2 cup walnuts, chopped
1 tsp fresh lemon juice
salt and pepper to taste
1/3 cup Miracle Whip Light
1 Tbsp fresh chives, chopped
Chop 1/3 cup celery (about 2 stalks).
Chop 1/2 cup walnuts
Core and chop a large apple (such as Granny Smith or Honeycrisp) equal to 1/3 cup
Combine these ingredients with 1/3 cup dried cranberries in a bowl.
Add 1/3 cup Miracle Whip light, 1 teaspoon fresh lemon juice, and salt and pepper to taste and toss gently until combined.
Use two lettuce leaves to to form a cup. and put 1/4th of the poultyy mix in the cuo.
Garnish with the chopped chives.
For variety, add some curry powder, change the dried cranberries to golden raisins and the walnuts to almonds. Add diced red peppers to the curry mix. Try substituting jicama for the apple.
