Hearty Soup

Ingredients

    2 tbsp olive oil
    1 c onion, chopped
    1 c celery, chopped
    1 c leeks, chopped, white only
    1 c carrot, chopped
    1 c sweet potato, chopped
    1/2 tsp salt
    1/2 tsp black pepper
    pinch cinnamon
    1 lb ground bison
    5 cup low sodium beef stock
    2 1/2 c water
    1 can tomato paste
    2 cans diced tomatoes, drains & liquid reserved
    1 tbsp honey
    2 14-oz cans beans (black, kidney, pinto, etc)

Directions

1. Heat oil in Dutch oven or large skillet over medium-high heat. Add onion, celery, leeks, sweet potato and carrots.
2. Saute until veggies begin to soften - takes 5 to 7 minutes. Stir.
3. Add seasonings & ground bison. Brown the bison and mix with veggies.
4. Stir in tomatoes, stock, water, and reserved liquid (add only enough water to make 2 1/2 c of water & tomato liquid combo). Add tomato paste, honey, and beans.
5. Bring to a boil. Reduce heat and simmer for 30 minutes.

Makes 8 servings.
