Rice Surprise

Introduction

This is a nice quick meal that can be made with what ever vegetable you have in the house. Try substituting other sauces as well or adding spices. It's fun and yummy! Ingredients

    1 onion chopped
    1 TBS coconut oil
    1 TBS minced garlic
    3.5 oz shiitake mushrooms cut up
    1 yellow bell pepper cut up
    3 cups fresh baby spinach
    1 tomato cut up
    1 cup vegetable broth

Directions

sauté onion and garlic in coconut oil until onions are transparent
add pepper and mushrooms and cook more
add spinach and cook until wilted
add broth, rice and chopped tomatoes
cook until hot
serve with a little soy sauce

    I normally make 3 cups of rice (dry) and then add what I feel like...I sometimes add more then others..go with what looks right for YOU.
