Ingredients

1 cup whole wheat flour
1 cup yellow cornmeal
1/4 cup splenda for baking
4 tsp baking powder
3/4 tsp salt
1/3 cup egg beaters
1 cup non fat milk
1/4 c canola oil
1 cup frozen corn
Directions
Stir together flour, cornmeal, splenda, baking powder and salt. Add egg beaters, milk and oil. Mix in corn. Beat until just smooth. Turn into a muffin tin lightly sprayed with oil. Bake at 425' for about 20 minutes.
Makes 8 large muffins.
It can also be baked in a 9x9 pan and cut into 9 or more smaller servings.
