Mexican chicken tortilla bake

Introduction

A super fast casserole that I got from a high school home economics teacher. Also a great way to use up leftover cooked chicken or turkey. A super fast casserole that I got from a high school home economics teacher. Also a great way to use up leftover cooked chicken or turkey.

Ingredients

    1 pound (16 oz) cooked chicken breast, cut into small bits

    1 (10.75 oz) can of tomato soup
    1 Cup Salsa
    1/2 Cup milk
    3 Mission soft taco carb balance flour tortillas, cut up into 1 inch pieces
    1 Cup shredded Kraft 2% cheddar
    1 can nonfat refried beans

Directions

Preheat the oven to 400*. In a bowl, mix together the cooked chicken, soup, salsa, milk, refried beans, tortillas and half of the cheddar cheese. Spoon into a 2 quart baking dish that has been sprayed with nonstick cooking spray. Top with remaining cheese. Cover and bake about 20 minutes, until hot. Garnish with shredded lettuce and sour cream (garnish not included in nutritional info).
