Ingredients

    1 cup old fashion rolled oats
    1 cup Light Silk SoyMilk
    1/4 tsp vanilla
    1/4 cup Splenda brown sugar blend
    3/4 cup unsweetened applesauce
    2 egg whites
    1/3 c Bob's Red Mill Whole Grain Soy Flour, 35% Protein
    2/3 cup whole wheat flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 Tbsp. cinnamon
    1/2 tsp nutmeg
    1/8 tsp cloves
    1/8 tsp allspice
    1/4 c dried cherries
    1/4 c dried cranberries
    1/4 c dried blueberries
    3/4 c chopped walnuts

Directions

Soak the oats, berries, soymilk and vanilla for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce, brown sugar and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together. Stir in nuts.
Add dry ingredients to wet and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20 minutes or until done.
