Ginger Biscuits (Gingerbread Men)

This is an old recipe handed down through my family. The nutrition information is for 50 biscuits but I can often make more, or less, it depends on the size and shape of the cutters. Please note that the prep time of 20 minutes does not include the 1-4 hours it takes for the dough to cool to a workable temperature. This is an old recipe handed down through my family. Ingredients

16 oz (31/2 cups) Plain Flour
8 oz (1 cup) Granulated Sugar
2 tsp Ground Ginger
1/2 tsp Bicarbonate of Soda (baking soda)
1 Egg
8 oz Golden Syrup
4 oz Margarine
Directions
Melt the syrup and margarine in a pan (or microwave)
Put all dry ingredients into a bowl, add egg & mix
Add the syrup/margarine and mix well. You may need to use your hands to get all the ingredients mixed in.
Leave for 1 hour in the fridge or 4 hours at room temperature to cool to a workable (rollable) temperature.
Roll out mixture and cut out shapes with cutters.
Bake at 180C/325F/Gas 4 for 15-20 minutes.
NB the nutrition information is for 50 biscuits, you may have more or less depending on the size/shape of your cutter. I have made a gingerbread house with 4 small men, trees and canes from this mixture.
