Easy Vegetable Stock

Introduction

This is a very simple stock that is great to keep on hand for soups and stews. I use my 6 quart slow-cooker and allow it to simmer. If you are using a smaller slow-cooker I suggest cutting back slightly on the amounts of the ingredients in proportion This is a very simple stock that is great to keep on hand for soups and stews. Number of Servings: 8

Ingredients

    1 Tbsp olive oil
    2 medium-size onions, chopped
    2 large carrots, chopped
    1 stalk celery,chopped
    3 garlic cloves, minced
    1 small potato, chopped
    1/3 cup parsley
    1 bay leaf
    1/2 teaspoon peppercorns
    8 cups water
    2 teaspoon tamari (or substitute with soy sauce)


Directions

Add the olive oil and water to a slow cooker. Add all ingredients to the slow cooker and allow to simmer 4-6 hours on low heat setting.
Mash all the vegetables and/or press through a sieve.
Stock will last 3-5 days in a sealed container in the refrigerator or up to 3 months in the freezer.
