Mexi-mac casserole
Submitted by: SHANIMCKNumber of Servings: 6
Ingredients
-
1 lb extra-lean ground beef
1 28-oz can whole or diced tomatoes
2 cups tomato sauce
1 small (8 3/4 oz) can corn
2 tbsp southwestern seasoning (I used Pampered Chef but you could use taco seasoning), or to taste
salt to taste
1/2 cup macaroni
1 cup 2% mexican blend cheese
Directions
Cook macaroni according to package directions. Drain.
Brown ground beef. Add seasoning, tomato sauce, tomatoes (if whole, cut up), corn and add salt to taste. Bring to a boil, then cook down on medium heat until there is little liquid left and the mixture is more of a casserole consistency, about 10-15 minutes. Add macaroni and cook a few minutes longer.
Pour mixture into a 9x9 casserole dish and top evenly with cheese. Bake at 375 for 10-15 minutes until cheese is melted.
Would be excellent with tortilla chips crumbled on top too.
