Chicken Maifun

Ingredients

    2 oz. maifun
    one medium carrot, grated
    2 stalks celery thinly sliced
    1/4 c thinly sliced sweet red pepper
    1 Tbsp. fish sauce
    3 Tbsp tamari
    1/4 tsp sesame oil
    4 cloves garlic, chopped
    3 tsp chopped fresh ginger
    1 tbsp olive oil
    1 tsp red pepper flakes
    1/2 boneless, skinless chicken breast
    1 large egg

Directions

Soften maifun in boiling water for 10 minutes, drain. Cook chicken in wok with 1/2 of the oil. Remove chicken set aside. Beat egg and scramble in wok. Remove to chicken and noodles. Stir fry rest of ingredients with remaining oil. When veggies are tender crisp add noodles, chicken, and egg. Stir until well mixed and warm.
