Next Day Oatmeal Pancakes

Ingredients

    2 cups rolled oats
    2 cups fat free milk
    2 tbsp white vinegar (approximate)
    2 tbsp Blue Bonnet Light, melted
    2 large eggs
    1/2 cup flour
    2 tbsp sugar
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt

Directions

Mix the milk at vinegar and let stand until it sours, about 5 minutes. In a large bowl, combine milk and oats. Cover bowl with plastic wrap and put in the refrigerator overnight or a minimum of one hour.

Remove oatmeal bowl from fridge and uncover. Mix in all the rest of the ingredients, beating well with a wire whisk. Cook on a hot griddle or in a skillet. About 1/4 cup batter = 1 pancake. Serves about 8.
