Beef Stroganoff

Ingredients

    2 lb beef sirloin, 1/2" strips
    2 Tbsp olive oil
    2 Tbsp butter
    1/4 cup finely chopped shallots
    1 lb mushrooms, thickly sliced
    1 cup beef broth
    2 Tbsp Cognac or brandy
    3/4 cup creme fraiche or whipping cream (subsitute Half/Half)
    1 Tbsp Dijon mustard
    1 Tbsp chopped fresh dill


Directions

Sprinkle meat with salt & pepper. Heat oil in heavy large skillet over highi heat until very hot. Working in batches, add meat in single layer and cook just until brown, about 1 minute per side. Using tongs, transfer meat to rimmed baking sheet.

Melt 2 Tbsp butter in same skillet over medium-high heat. Add shallots and saute until tender, scraping up any browned bits, about 2 minutes. Add mushroom. Sprinkle with pepper and saute until brown and juices evaporate, about 12 minutes. Add broth, then Cognac. Simmer until sauce thickens and just coats mushrooms, stirring occasionally, about 14 minutes. Stir in cream and mustard. Add meat and any accumulated juices from baking sheet. Simmer over medium-low heat until meat is heated through but still medium-rare, about 2 minutes. Stir in chopped dill. Season to taste with salt and pepper.

Serve over egg noodles and sprinkle with Hungarian paprika.
