Carrot Cake, Petitecef's, no frosting, 1/48

Ingredients

    3 cups grated carrots
    2 1/2 cups sugar
    6 large eggs
    1 cup canola oil
    2 tsp vanilla extract
    1/2 cup orange juice
    3 3/4 cups spelt flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 salt


Directions

Pre-heat oven to 350F.Mix everything and bake in a parchment lined 9x13" pan for 1 hour, turning half way through. Cool and cut into 48 (apprx. 1 oz.) portions.
