Amy's Turkey Stew

Introduction

Number of Servings: 12

Ingredients

    2 cups left-over roasted turkey meat (light & dark mix)
    6 small potatoes, large dice
    2 cups baby carrots
    3 cups fat-free beef broth (chicken or veggie work well also) - use low sodium broth to lower salt content
    1 cup water, warm
    1/4 cup all purpose flour
    1 cup frozen peas
    1 small onion
    1 small package fresh baby bella mushrooms, whole or sliced
    1 tsp black pepper
    1 tbsp kosher salt
    3 fresh garlic cloves (minced) or 1 tbsp garlic powder
    1 tbsp dried Italian herb mix


Directions

Boil potatoes and carrots in broth until almost cooked through (about 10 minutes). Add chopped turkey meat, mushrooms, onion, garlic, herbs, salt and pepper. Cook until mushrooms and onions have wilted. Separately, mix water and flour until relatively smooth and add mixture to hot stew. Incorporate flour mixture into stew. Add frozen peas. Cover and simmer until peas are hot. Stir lightly and serve immediately.
(Makes about twelve 3/4 cup servings.)
