1/4 cup raisins
1 3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup pumpkin (canned, puree)
1/4 cup maple syrup
1/4 cup canola oil
Add the pumpkin mixture to the dry ingredients and stir just until blended. Divide the batter among the prepared muffin cups.
Bake for 20 minutes or until the muffins spring back when pressed with a finger. Set on a rack to cool for 5 minutes. Serve warm.
