Introduction

Ingredients

    2 cups wedged ripe tomatoes
    1 cup sliced onion
    2-3 cloves of garlic
    1/4 cup Olive oil
    salt & pepper

Directions

place all ingredients into a 9x13 pan; toss well to coat all pieces with olive oil; bake in a 375 oven for 1 to 1-1/2 hours until the tomatoes are well cooked; remove from oven & blend together with hand mixer or place into food processor once cool enough; use on rice or pasta!
