Other fruit juices, dried fruit or pureed fruit can be used as well.

These are low fat and los carb and can be freezed nicely.

Ingredients

    1/3 Cup Granulated Sugar
    1/2 Cup Applesauce, unsweetened
    Egg, fresh, 1 medium
    1 Cup Cooked or canned Pumpkin, pureed
    1.5 cup Whole Wheat Flour,
    3 tsp Baking Powder,
    5 tsp Baking Soda, .
    1/4 tsp Nutmeg, ground,
    1 1/2 tsp Cinnamon, ground,
    1/4 tsp Cloves, ground,
    1/2 cup Orange Juice,
    1/2 Cup Walnuts, chopped
    1/2 Cup Raisins
    1 Cup Oats,
    1/4 Cup Coconut, sweetened,

Directions

Cream Sugar, applesauce, egg and pumpkin. Stir in dry powder ingredients. Stir in OJ. Stir in nuts, raisins and oats. Spread in lightly oiled pan. Sprinkle coconut over top and bake 25-30 minutes. Cool in pan 5 minutes then cool on racks.
