1 cup flour 4 tsp baking powder 2 Tbsp sugar 1 tsp salt 1 egg 2 Tbsp oil 1 cup milk
Mix flour, baking powder, sugar & salt. Add egg, oil, milk; whisk until batter is lump free. Let rest for 10 minute and give it a stir. Heat nonstick pan and pour batter, cook 2 minutes and flip, cook 1 more minute. Make any size pancakes. Recipe is for 2" diameter pancake, makes about 22 -24 each.
I substituted 1/2 cup whole wheat flour, 1/2 white, and they turned out really well. I don't think anyone would know the difference. Also, since it's October, I added 1 tsp pumpkin pie spice!
