Beef and Bean Choulent, Petitechef's

Introduction

Number of Servings: 8

Ingredients

    2 T olive oil
    1 onion, diced
    3 garlic cloves, crushed and minced
    1 lb lean beef shoulder, cut into 8 pieces
    1/2 lb of mixed beans, pre-soaked overnight
    3/4 cup barley
    4 medium potatoes, peeled and quartered
    2 tsp raw sugar
    2 T paprika
    black pepper
    8-10 cups water
    2 tsp salt

Directions

Thursday night soak the beans. Friday morning check, rinse and drain the beans. Put everything except the salt in a large crockpot in the order of listing. The water should cover everything by an additional 2 inches. Cover and cook on low for 8 hours. Add the salt and adjust height of water to 1 inch over the solid ingredients. Cover again and cook on low, undisturbed until Shabbos day. Carefully remove the ceramic insert from the crock pot before serving.
