Mixed Berry Whole Wheat Muffins

Introduction

Number of Servings: 24

Ingredients

    Pre-Heat Oven to 400
    1 Cup Flour
    1.5 Cup Whole Wheat Flour
    2/3 cup sugar
    2 Eggs Whites
    1tsp Vanilla Extract
    1tsp Baking Soda
    1/8 tsp Salt
    1 Tsp Ground Cinnamon
    2cups frozen mixed berries

Directions

Mix Flour, Whole Wheat Flour, Sugar, Salt, Cinnamon, Baking Soda, blend in egg whites
Spray muffin pans with non stick cooking spray and fill each cup 2/3 full w/ batter bake for 20-25 minutes until toothpick inserted in the middle comes out clean.

  • I am giving only two star because of the recipe. Something is not right, 2 egg whites are just not enough liquid to get this mixed and I tried, it was like cement. Ended up using at least 1 cup of milk to get to come together. Turnbo2008, did you miss an ingredient????? - 4/17/13
