I took an old family favorite and converted it by using sugar free jello, diet coke and fat free cream cheese. I also reduced the amount of pecans, but chopping fine still spreads the nutty taste around. Ingredients

Large box sugar free cherry jello
Can of sweet cherries, drain & reserve liquid
Liquid from cherries plus enough water to make 2 cups
2 cups diet coke
8 ounces fat free cream cheese softened
1/4 cup pecans, chopped fine
Directions
Heat cherry juice and water to boiling.
Add to jello & stir until all dissolved
Add cream cheese cut into small pieces at this point (helps to "melt"/breakup the cheese.)
Mix well then add the 2 cups of diet coke.
Allow to set up slightly then add the well drained cherries and the pecans.
I then pour into a Christmas Tree mold for Christmas or another mold for what ever occasion.
Chill overnight or at least 8 hours until firm then turn out on to platter or serve from container cut into pieces.
