Spinach Stuffing

Introduction

Use this stuffing to fill mushrooms or wonton wraps; to stuff inside chicken cutlets, turkey cutlets, fish filets; or just eat it as is...deelish! Use this stuffing to fill mushrooms or wonton wraps; to stuff inside chicken cutlets, turkey cutlets, fish filets; or just eat it as is...deelish!

Ingredients

    1 chopped onion
    8 oz. part skim ricotta cheese
    4 oz. feta cheese
    1 10 oz package frozen chopped spinach

Directions

Spray a non-stick pan with Pam and saute onions until they are carmelized. (You will need to add a little water.) Place the carmelized onions, ricotta, feta, and cooked spinach into a bowl and thoroughly mix.

Use this stuffing as suggested in introduction.

If used to stuff wontons, chicken cutlets, turkey cutlets or fish filet use 1/4 cup stuffing per serving.

If used to stuff mushrooms, use 1/8 cup of stuffing.

Recipe = 2 & 1/2 cups of stuffing or 10-1/4 cup servings.
