Sweet and Sour Slaw

Ingredients

3 cups thinly shredded cabbage
1 medium onion, thinly sliced
2 medium apples, thinly sliced or grated
2 cups grated carrot
2 tsps brown sugar (adjust to taste)
3 tbs cider or other vinegar (adjust to taste)
1 tbs oil
optional - fresh garlic, 1 clove sliced
1/2 cup or more water.
Directions
In a heavy saucepan put the oil and onions. ( if you like fresh garlic, you can add it here) Cook over slow heat stirring occasionally for 5 minutes. Add the cabbage and apples and continue cooking 5 minutes more. Add the rest of the ingredients adjusting sweetness and sourness if desired. Mix well. Add 1/2 cup water. Place the lid on the pan and turn the heat to very low.
Cook for approx. 20 minutes checking to stir and make sure there is some fluid still in the pot ( if not enough add more water, if too much leave the lid off for a bit.- it depends on how much moisture is in your vegetables so its variable)
This is a nice hearty sidedish that has lots of vitamins. It's great with pork of any kind . We like to have it with sausage and perogies :)
