Cranberry almond muffins

Number of Servings: 12

Ingredients

    * 2/3 cup 2% milk
    * 1/2 cup unsweetened applesauce
    * 1 egg
    * 1 Tbsp oil
    * 2/3 cup quick oats
    * 1/3 cup wheat germ
    * 2 cups whole wheat flour
    * 2.5 teaspoons baking powder
    * 1/2 teaspoon cinnamon
    * 1 teaspoon salt
    * 3/4 cup sugar
    * 2 cups loosely chopped fresh cranberries
    * 1/2 cup almonds, chopped

Directions

Mix egg (beat), applesauce, milk, and oil in a bowl. Add oats and wheat germ and let sit 5 minutes ot soften.
In another bowl, mix flour, baking powder, salt, cinnamon, and sugar.
Add wet ingredients, cranberries, and almonds to dry ingredients. Mix until just evenly moist.
Distribute in 12 greased muffin cups.

Bake at 400F for 20 to 25 minutes, until tester in center muffin comes out clean.
