Easiest Cookies Ever--Red Velvet

Introduction

Just by using any flavor of boxed cake mix and adding extra ingredients you can produce some tasty cookies. Of course this will change the calories depending on what is added. For this recipe no additional ingredients besides the base were added to give you some idea of what a basic cookie would be like. Just by using any flavor of boxed cake mix and adding extra ingredients you can produce some tasty cookies. Of course this will change the calories depending on what is added. Number of Servings: 42

Ingredients

    1 box Duncan Hines Red Velvet cake mix,
    Egg, fresh, 2 large
    *Canola Oil, .5 cup

Directions

Mix all ingredients together and beat until smooth. Drop by teaspoon or small round mellon ball scooper. This should produce a 2 to 2 1/2 in cookie.
Bake in a preheated 350 degree oven for 10 to 12 minutes on a greased cookie sheet or one lined with bakers paper.
Let cool for a minute or two before removing to cooling racks. I get 3 1/2 doz cookies.
You can also put 2 cookies together with cream cheese frosting between them or frost each with cream cheese frosting to be like small red velvet cakes. These are really pretty at Christmas.
