Thai Chicken Stirfry

Ingredients

1 Chicken Breast, no skin, thinly sliced
2 cups Swanson Chicken Broth 99% Fat Free
3 tbsp Fish Sauce
1 Lime Juiced, 1 lime yields
1 tsp Brown Sugar, packed
1 tsp Canola Oil
1/2 cup Onions, raw, chopped
3 Garlic, cloves, minced
1 tsp Ginger Root, grated
1 tsp Jalapeno Pepper, minced
1 tsp Canola Oil
1/2 cup Broccoli, fresh, chopped
1/2 cup Carrots, raw, chopped
1/2 cup Cabbage, fresh, chopped
1 cup Mushrooms, fresh, sliced
1 cup Green Peppers (bell peppers), chopped
4 tbsp Cilantro, raw,
4 tbsp Basil, 4 tbsp
Directions
Heat chicken broth, fish sauce, lime juice and brown sugar. When boiling add sliced chicken to poach 3-5 minutes. Reserve.
Heat oil and saute onion, garlic, jalapeno, and ginger 2 minutes. Add 1/4 cup of reserved broth and all the chopped vegetables. Cook 1-2 minutes, or until vegetables are heated but remain nearly uncooked Remove Chicken from broth and add to vegetables. Add Cilantro and Basil and serve. Reserved broth may be served as a soup with a few of the vegetables, as it is included in the calorie count and it is delicious. Serve with rice.
To increase saltiness add fish sauce.
To increase sourness add lime juice
To increase spice add garlic/ginger/jalapeno
