Chilaquiles

Introduction

I like to make these for a weekend breakfast. You can double the amounts; I am often cooking for myself. I like to make these for a weekend breakfast. You can double the amounts; I am often cooking for myself.
Number of Servings: 1

Ingredients

    1 oz. Lowfat Baked Tortilla Chips
    Cooking spray
    1 can low-sodium V8
    ½ can diced tomatoes – do NOT drain
    ¼ cup FF mozzarella cheese
    1 egg
    FF sour cream
    Hot sauce

Directions

Spray a frying pan with cooking spray. Spread the chips in the pan. Pour the V8 and the tomatoes over them. They will be quite wet. Heat until they are boiling and simmer without stirring, uncovered, until the liquid is condensed and soaked into the chips. Sprinkle FF mozzarella while it simmers to melt. When the liquid is reduced, scoop carefully onto a plate, like serving a piece of pie (keep it flat). Crack an egg in the pan and fry or scramble, your preference. Serve over the chilaquiles with a dollop of FF sour cream and hot sauce to taste.
