4 boneless, skinless chicken breasts
4 wedges of your favorite flavor Laughing Cow cheese
1 cup baby spinach
1 medium tomato, sliced
Stuff each breast with 1 wedge of cheese (smearing it around the inside of the pocket), 1/4 cup of spinach and 1/4 of the tomato slices.
Season the outside of the breast with your favorite seasoning mix and wrap each breast individually in foil. Bake at 375 until done. (It will depend on how big the breasts you used were.)
