Mushrooms, fresh, 20 large
Yellow Onion, .5 cup chopped
Goat Cheese, Soft, 4 oz
Olive Oil, 2 tbsp
Thyme, fresh, 1 tsp chopped
Pepper, black, 5 dash
Salt, 5 dash
On large sheet pan, arrange cleaned mushroom caps. Stuff with about a teaspoon of the warm mushroom, onion, and goat cheese mixture. Drizzle with remaining 1 tbsp olive oil. Bake in preheated oven for about 20 minutes, until mushrooms are cooked and cheese has begun to brown slightly. Cool a bit before serving, garnish with fresh thyme sprigs.
