Introduction

A hearty, warm, filling vegetable chili. Easy to adapt for personal taste/availability of veggies. A hearty, warm, filling vegetable chili. Easy to adapt for personal taste/availability of veggies.
Number of Servings: 4

Ingredients

    1 can pinto beans, drained and rinsed
    1 can organic kidney beans (ONLY organic! regular have sugar/corn syrup added), drained and rinsed
    1/2 medium onion, diced
    2 small cloves garlic, mashed or minced
    1 large carrot, chopped
    1 stalk celery, chopped
    1/2 cup diced green bell pepper
    1/2 large zucchini, chopped
    1/4 cup favorite salsa
    2 tsp chili powder
    2 tsp cumin powder
    1/4 tsp paprika
    1 tsp cilantro
    2 tsp lime juice
    2 cups vegetable stock
    3/4 cup Greek style yogurt (or any plain yogurt, strained for 1-2 hours).

Directions

Dry saute onion in large saucepan until it begins to turn tan. Add in garlic, saute about 1 minute, then add in carrot and celery. Cook 2-3 minutes, then add in bell pepper and saute another minute. Add in zucchini, beans, and spices and seasonings and lime juice. Stir well to combine. Pour in enough vegetable broth to bring to a consistency that you like - thicker or thinner. It will thicken a little as it cooks, so keep that in mind.
Bring to a boil, then reduce heat, cover, and simmer 10 minutes.
Ladle into bowls and serve with a spoonful of Greek yogurt stirred in (don't skip this!! It definitely makes this chili!).

Serves 4, about 1 1/2 - 2 cups each.
