Tomato veggie soup

Introduction

Easy to make, great with cheese sprinkled on top. Easy to make, great with cheese sprinkled on top.
Number of Servings: 8

Ingredients

    Red Ripe Tomatoes, 3 cup, chopped or sliced
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Garlic, 3 cloves
    Basil, 5 leaves
    Water, tap, 4 cups
    Beef bouillon, 1 cube
    Olive Oil, 1 tbsp
    Salt, 1 dash
    Pepper, black, 1 dash
    *Splenda, .5 tsp

Directions

Put onions, olive oil, garlic, and carrots in pot and saute over low heat but only until softer. Then add the rest of the ingredients, and bring to a boil. Reduce heat to simmer and leave covered for 30 minutes or so. Season to taste. Serve with parmesan or other cheese if desired.
