Healthy Stuffed Turkey Peppers

Ingredients

    1 pound Ground Turkey
    4 peppers of any color, stems cut off, seeded, and then cut in half lengthwise
    1 Zucchini, diced
    1 Onion, chopped
    3 cloves Garlic, minced
    dash of Black Pepper
    1/2 teaspoon Oregano
    1 Tablespoon Basil
    1 cup Marinara Sauce
    2 oz. Mozzarella Cheese
    1/4 cup Shredded 4 Colby & Monterey Jack Cheeses
    Olive Oil for sauteing
    dash of salt

Directions

Place the peppers in a lightly oiled casserole dish, season with salt and bake for 20 minutes. Remove peppers, drain any water that has expelled from the peppers and set aside. Increase oven temperature to 400 degrees.

Saute onions and zucchini golden and soft about 7 minutes. Add garlic cook 1 minute more. Set aside.

Saute turkey till no pink is seen. Add turkey and tomato sauce and seasonings to veggies. Cook for 5 minutes or until most of the liquid is gone.

Remove from heat and add Mozzarella - mix to combine. Scoop mixture into peppers. Top wth shredded cheese and bake for 20 minutes at 400 degrees.
