Roux des Quatre Saison - Crockpot

Introduction

Dish of the Four Seasons - The premise of this dish is to use whatever vegetables are in season and readily available to you. This recipe is just a guideline. Use any vegetables that are in season.

Basically, you fill your crockpot half way with sliced onion and whatever other vegetables are in season or look good. Add canned beans and seasoning, and top with tomatoes.

Ingredients

    1 large onion, sliced
    2 cups sliced zucchini
    2 cups sliced yellow squash
    3 cups fresh spinach, stems removed
    3 cans tomatoes - diced, sliced, whole - whatever you want
    3 cloves garlic, minced
    2 T dried basil

Directions

Fill the crockpot half way with sliced onion, zucchini, yellow squash and spinach. Add chickpeas, basil and garlic to the top of mixture. Fill the crockpot the rest of the way with canned tomatoes - or fresh if in season.


Cook on low all day.


Serve over pasta, rice, grilled portobello mushrooms, thick slices of grilled or broiled bread rubbed with fresh garlic, grilled or roasted chicken breast, etc. What you serve it with is just as versatile was what you put in it!
