Butternut squash, sage, and sausage pasta

Introduction

A deLICIOUS (if I do say so myself) low calorie, vegetarian, italian-inspired dinner for one (but recipe can easily be multiplied). A deLICIOUS (if I do say so myself) low calorie, vegetarian, italian-inspired dinner for one (but recipe can easily be multiplied).
Number of Servings: 1

Ingredients

    - Tofu Shirataki Noodles, one 8oz package (can substitute regular pasta, but adjust calories accordingly)
    - 1 cup butternut squash, cubed
    - 1-2 T chopped, fresh sage
    - 2 cloves garlic, finely chopped
    - 1/2 T olive oil
    - 2 Morningstar Farms Breakfast links, (or other sausage links)
    - 1 T grated parmesan cheese
    - salt to taste

Directions

- In medium saucepan, saute cubed butternut squash with 1/2 t olive oil, garlic, and sage until lightly browned and beginning to soften.
- Cook sausage links according to package directions (in microwave or on stove-top).
- Crumble sausage links into pan and continue to mix/sautee briefly until links brown lightly.
- Rinse, drain, and warm Shirataki noodles.
- Add noodles and 1 T olive oil to to saute pan and mix.
- Plate and top with parmesan cheese.
