1 pd dried pinto beans, washed, picked over and saoked if you liked
2 onion - one whole and one minced
salt and pepper to taste
1 cup bean cooking liquid
1 fresh hot chile seeded and minced
1 tsp ground cumin
.5 tsp dried oregano
1 tbp minced garlic
When the beans begin to sfoten, after 30 minutes to an hour, season with salt and pepper. Continue to cooke, stirring occasionally, until the beans are quite tender but still intact, 1 to 2 hours; add water if necessary.
Drain the beans, reserving the cooking liquid. Discard the whole onion and add the minced onion, the liquid, the chile, cumin, oregano and garlic. Turn the heat to medium and bring to a boil. Cover and turn the heat down to low.
Cook, stirring occasionallyu and adding more liquid if necessary, until the beans are very tender and the flavors have mellowed, about 15 minutes.
