Broccoli Cheese Squares (ZONE, too)

Introduction

This is ZONE friendly.. a little high in Fat... and just add a Piece of Fruit or Two (or a salad) to make a complete meal... Great to bring to a brunch. There's no crust... and you won't miss it... Ingredients

    2 TB Margarine or Butter, melted
    3 Cups (12 oz) Shredded 2% cheese.. (I use a mexican (nonspiced) blend and/or cheddar & Mozzarella)
    1/2 cup Ground Almond Meal
    1 teaspoon baking powder
    2 cups nonfat cottage cheese small curd
    2.5 cups Egg Beaters (Can use 10 eggs)
    2 package (10-oz size) frozen chopped broccoli thawed, drained and squeezed dry
    Italian salt free spice blend, to taste.

    NOTE: Calorie count includes 3 cups cheese

Directions

At least 1 1/4 hours or up to 2 hours before serving: Preheat oven to 350°.

Using non-stick Butter Flavor spray, coat a 9x13 glass baking dish

In a large bowl, toss Cheese Blend, Almonds and baking powder until cheese is evenly coated; set aside.

In a small bowl, break up curds of cottage cheese with a fork;, add Broccoli and stir well. Set aside.

In another large bowl, beat eggs with a whisk until blended or quickly stir the eggbeaters.

With fork, stir eggs into the shredded cheese mixture, Add cottage cheese, broccoli and melted butter/margarine. Add spices to taste.. Spread in baking dish.

Bake for 40 to 45 minutes or until a knife inserted in center comes out clean. Cool at least 10 minutes before cutting into squares.

Makes 15 Squares.
