Vegetarian Taco Soup

Introduction

if a vegan, substitute chicken broth if a vegan, substitute chicken broth
Number of Servings: 12

Ingredients

    1 onion
    1 tsp olive oil
    1- 14 1/2 oz. can whole kernel corn
    1-14 1/2 oz. can black beans
    1-14 1/2 oz. can white beans
    1-14 1/2 oz. can no-fat refried beans
    2-14 1/2 oz. cans chopped/diced tomatoes
    1-14 1/2 oz. chicken broth
    1 package taco seasoning
    1 cup soy crumbles

Directions

Saute 1 chopped onion in olive oil until brown then add each of the can goods with their juice add the taco seasoning and soy crumbles. Simmer 15 minutes. As per Weight Watchers 1 and 1/2 cups equals 1 point

  • Calorie-wise this is excellent. Unfortuantely I cannot tollerate that much sodium in one meal. It certainly is healthy, however. I will pass with deep regrets. - 1/2/09
