Grandma's Burritos

Introduction

My grandma made these and they are simple and great. My grandma made these and they are simple and great.
Number of Servings: 8

Ingredients

    Lean Ground Beef
    1 can enchilada sauce
    1 can refried beans
    1 can chopped green chiles
    8 oz grated cheddar cheese
    8 flour tortillas
    optional: sour cream, salsa

Directions

grown and drain the ground beef. Add in the refried beans, enchilida sauce and green chiles. Cook until heated. Warm the four tortilias, spoon burrito mixture in middle of tortilla, top with cheddar cheese, sour cream and salsa. Roll up end and sides and serve. Before adding the sour cream you can wrap the burrito in foil or plastic wrap and freeze.

  • The calories count is incorrect. Only one tortilla, one serving enchilda sauce and 1 cup is counted in the total. I think each burrito is closer to 400 calories. - 1/9/09

  • I'm going to try this recipe using Morning Star veggie crumbles, instead of ground beef and use low calorie flour tortillas. Maybe that will help reduce the calories. - 1/9/09

  • Uh oh! I made these tonight, & even with substituting 1 lb extra lean turkey, fat free refried beans & using reduced fat cheese, these calculated to 416 calories each, 14.5 fat, 44 carbs, 3 fiber & 14 protein. They WERE sooo delicious, but MUCH higher than the values stated. What happened??? - 1/8/09

  • I used too big of a can of encillada sause, should use a small can. But it was very good, just a little runny. I used whole wheat, low fat toritalls and liked it very much. Next time I will use either turkey or meat substitue. Good Dinner, hubby ate 3!!! - 1/8/09

  • A great recipe! I took Celena23's advice and substituted ground turkey and black beans. I also added chopped romaine & tomatoes on the side, also used fat-free sour cream. A hit with my entire family! My first try at a Sparkpeople recipe -- thanks Groovygran4 for sharing ! - 1/5/09

  • I will so be making these! Haven't had a good burrito in a LONG time. Though I'm going to substitute the white tortillas for whole grain tortillas, and try my hardest to make ground turkey instead of ground beef taste good :)

  • Whoa!! This has way too much fat & cals. If I tried it I would use Ground Turkey Breast, low fat cheese, low fat sour cream, reduced fat refried beans, or the slow
    cooker refried beans, but regular refried beans have lard in them & are not healthy, this recipe can be changed to have much less cals. - 1/5/09

    i have heated in microwave on lower level cooking heat so they won't get hard. or you can put in pan in oven and pour cheese sauce over it, wouldn't that be good?
