Chicken and Wild Rice Soup

Ingredients

    2 T. Unsalted Butter
    1/2 C. chipped onion
    1/2 C. chopped carrots
    1/2 C. fchoppped mushrooms
    1 (6oz) pkg Uncle Ben's Long Grain and Wild Rice
    1 (32) container Low-Sodium Chicken Broth
    1 pound chopped, cooked chicken breasts
    3/4 C. shredded parmesan cheese
    Salt and pepper to taste

Directions

Melt butter, cook onion, celery, carrots, and mushrooms until tender. Stir in long grain and wild rice, seasoning packet, and 2 1/4 C. chicken broth. Bring to boiling and simmer covered for 25 min until rice is tender. Stir in chicken and remaining chicken broth. Simmer an additional 5 minutes. Stir in cheese before servingg. Season with salt and pepper.
