Chicken & Rice Casserole

Ingredients

    3 cups dry rice, cooked
    6 boneless skinless chicken breasts, cooked and shredded
    1 large onion
    1 tbsp olive oil
    1 tbsp butter
    1.5 cans cream of chicken soup
    8 oz part skim mozzarella cheese

Directions

Cook onions in butter, add shredded chicken, rice, soup with enough water to rinse out can, and a bit of garlic salt. Layer the chicken goop with cheese in a sprayed casserole dish, ending with cheese. Cook at 350 for about 30 minutes, until bubbly and cheese is golden brown.
