Introduction

My love affair with amaranth has no end! This is a sweet, simple, and healthy snack. Enjoy it! My love affair with amaranth has no end! This is a sweet, simple, and healthy snack. Enjoy it!
Number of Servings: 6

Ingredients

    1/2 cup amaranth grain, coarsely ground
    2 cups unsweetened apple juice
    1 cinnamon stick
    2 cups berries
    2 tablespoons of honey
    Lemon juice from one lemon
    Lemon zest from one lemon (optional)
    Pinch of salt



Directions

Coarsely grind your amaranth grains by putting them in a spice grinder, food processor, or doing it by hand via mortar and pestle.

Add all ingredients except the honey and berries to a large saucepan and bring to boil over medium-high heat. Let boil until amaranth softens and then reduce to a simmer for 10 minutes.

Take off heat and remove cinnamon stick. Stir in the berries and honey. Pour the pudding into small containers and let cool in a dry place. Remove pudding to refrigerator.
