Introduction

Very simple, filling and tasty winter warmer. Perfect to make on the weekend, so you can take it to work during the week. Very simple, filling and tasty winter warmer. Perfect to make on the weekend, so you can take it to work during the week.
Number of Servings: 4

Ingredients

    250 grams dry soup mix (barley, split pea, lentils)
    3 finely chopped onions
    1 heaped tbsp low-sodium veggie bouillon
    4 heaped tbsp curry powder
    2 cups cubed butternut squash
    1 can chopped tomatoes
    8 cups water

Directions

Soak soup mix overnight. Drain, add water and bring to the boil. Simmer on low heat for approx. 1 hour until ingredients are softened.

Add remaining ingredients and simmer for another 1/2 hour or until squash is soft. Soup should be thick enough to fill you up on its own. But feel free to eat it with anything you like!

  • Very quick and easy recipe to make and a good way to use up one of the many jars of butternut squash I canned last fall! I might add some cayenne or chilis next time to make it more spicy, but otherwise it was good. Based on 4 servings, each serving ended up being 2 1/2 cups, so basically a meal! - 3/12/11
