(2) 15 1/2 oz cans of black beans, undrained (or use about 4 cups of soaked black beans)
2 tsp chili powder
1/2 tsp ground cumin
1 clove garlic, minced
1 bay leaf
12 small flour tortillas
6 scallions, minced
2 tomatoes, chopped
1 cup grated cheddar cheese
Salsa or sour cream for garnish (not included in calorie count)
Place 1-2 heaping tablespoons of bean mixture in center of each tortilla, spread out, and top with scallions, tomatoes, and cheese. Roll up in tube shape and place in a 9x13 inch pan, seams down.
Bake at 400 until lightly browned (about 15 minutes).
Garnish with sour cream or salsa as desired.
